Roasted Mushrooms, Green Beans, and Onions

Ingredients

  • 4 ounces Cremini mushrooms, sliced 1/2″ thick
  • 8 ounces fresh green beans, cut into 1 1/2″ pieces
  • 4 ounces sliced red onion
  • 1 to 2 Tablespoons olive oil
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon soy sauce
  • salt and pepper to taste
  • 1 Tablespoon Parmesan Garlic Butter see recipe below

Parmesan Garlic Butter

  • 1 stick (1/4 pound) unsalted butter, softened
  • 1/3 cup finely grated parmesan cheese
  • 2 cloves fresh garlic, minced
  • 1 Tablespoon finely chopped fresh parsley
  • 1/2 teaspoon dried basil

Instructions

  1. Preheat oven to 400°F or preheat grill.
  2. Mix all ingredients above except the Parmesan Garlic Butter in a plastic freezer bag or non-reactive container until all the vegetables are well covered.
  3. Spread in a single layer on a baking sheet and roast in oven for approximately 15-20 minutes until vegetables are tender. (If cooking on the grill then the cooking time will be less. Use a grill basket and toss the vegetables occasionally.)
  4. When done, remove vegetables and place in a medium bowl.
  5. Top with 1 Tablespoon of the Parmesan Garlic Butter.
  6. Toss and serve immediately.

Parmesan Garlic Butter

  1. Blend all the ingredients and store in refrigerator until ready to use.

Gr8 Tip:

The Parmesan Garlic Butter can also be used as a topping for grilled or roasted beef as well as a spread for making garlic bread.
