This is a Gr8 appetizer that can be served warm or at room temperature. It is easy to make ahead of time and assemble right before your guests arrive; or, assemble ahead of time and warm for a short time in the microwave before serving (make sure the picks are wooden). I have served this at a backyard barbecue and it’s also a hit as a Thanksgiving appetizer. Enjoy!
A wonderful appetizer good anytime of the year and shared from Southern Living.
Preheat oven to 450ºF.
Place sweet potato cubes in a bowl and toss them with the oil and salt and pepper.
Place them in a single layer on a lightly greased jelly-roll pan.
Bake for 10 minutes and then toss the potatoes with a spatula. Make sure to return them to a single layer and bake for another 5 to 10 minutes until lightly golden brown.
In a nonstick skillet, cook the cut sausage pieces until light brown on both sides.
Drain the sausage slices on paper towels to remove excess oil.
Place each sausage slice on top of a sweet potato cube and hold each together with a wooden pick.
Serve with Lemon-Garlic Mayonnaise.
Stir together all ingredients.
Store in an airtight container in refrigerator up to 7 days.
All steps above can be prepared ahead of time and refrigerated until time to serve. Before assembling, warm the potatoes and sausage a bit in the microwave or assemble and serve at room temperature.
