Sweet Potato Squares with Lemon-Garlic Mayonnaise

Sweet Potato Squares platedThis is a Gr8 appetizer that can be served warm or at room temperature. It is easy to make ahead of time and assemble right before your guests arrive; or, assemble ahead of time and warm for a short time in the microwave before serving (make sure the picks are wooden). I have served this at a backyard barbecue and it is also a hit as a Thanksgiving appetizer. Enjoy!

Sweet Potato Squares with Lemon-Garlic Mayonnaise

A wonderful appetizer good anytime of the year and shared from Southern Living.

Ingredients

Sweet Potato Squares

  • 2 pounds sweet potatoes, peeled and cut into 32 (1") cubes
  • 2 Tablespoons olive oil
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/2 pound spicy smoked sausage (or any flavor you like) cut into 32 (1/2") pieces
  • 32 wooden sticks

Lemon-Garlic Mayonnaise

  • 1 cup mayonnaise
  • 2 Tablespoons chopped fresh flat-leaf parsley
  • 2 teaspoons minced garlic
  • 1 teaspoon lemon zest
  • 2 Tablespoons fresh lemon juice
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon chili powder, (optional)

Instructions

Sweet Potato Squares

  1. Preheat oven to 450ºF.

  2. Place sweet potato cubes in a bowl and toss them with the oil and salt and pepper.

  3. Place them in a single layer on a lightly greased jelly-roll pan.

  4. Bake for 10 minutes and then toss the potatoes with a spatula. Make sure to return them to a single layer and bake for another 5 to 10 minutes until lightly golden brown.

  5. In a nonstick skillet, cook the cut sausage pieces until light brown on both sides.

  6. Drain the sausage slices on paper towels to remove excess oil.

  7. Place each sausage slice on top of a sweet potato cube and hold each together with a wooden pick.

  8. Serve with Lemon-Garlic Mayonnaise.

Lemon-Garlic Mayonnaise

  1. Stir together all ingredients.

  2. Store in an airtight container in refrigerator up to 7 days.

Recipe Notes

Gr8 Do-Ahead Tip:

All steps above can be prepared ahead of time and refrigerated until time to serve.  Before assembling, warm the potatoes and sausage a bit in the microwave or assemble and serve at room temperature.
