Growing up the only tacos I knew were the crunchy u-shaped tortillas filled with ground beef that had been seasoned with an envelope of taco seasoning and topped with lettuce, tomatoes, and shredded cheddar cheese. I am so Gr8-ful that us gringos have finally learned how to truly enjoy tacos! (There’s is even a taco emoji now!🌮)
Tacos make a Gr8 meal because they are so versatile. They can be made using corn or flour tortillas, they can be soft or crispy, they can contain a myriad of fillings, pork, beef, fish, chicken, vegetables…just about anything! They can be vegetarian, vegan, even gluten free!
Here at Great Eight Friends we LOVE our tacos, as is evident in our posts this past month. We have four different taco recipes, pork, shrimp, fish, and even vegetarian! Hmmm, maybe we need a beef taco!
Kyle made these incredible Charred Poblano Tacos for the Night in Margaritaville Gr8 Dinner that she and Joel recently hosted. The creaminess of the queso, the sweetness of the corn and piquant poblano pepper make this a perfect appetizer when served in the small street size tortillas. This Cajun Shrimp Taco recipe was adapted from an appetizer we loved. Added to a corn tortilla, topped with a variety of veggies and the Chili Lime Sauce, the spicy shrimp creates a gratifying crunch at first bite.Debbie introduced us to making Carnitas in the slow cooker…perfect for a weeknight. Stack up the tortillas, lay out your favorite toppings and start a new tradition with Taco Tuesdays!
If you’re grillin’ and chillin’ there’s not a much easier main course than Grilled Fish Tacos. This is a light and easy dinner, Gr8 for summertime or anytime!Try something special on your next taco night…make your own tortillas! That’s right, Handmade Corn Tortillas are easier than you think. And Kyle has shown us how.
And if you need a fresh salad to accompany those tacos, or if you just want a salad that is both beautiful and delicious, (and a light main course!) try Jurga’s Marinated Nectarine Salad with Burrata. This salad is creamy, crunchy, sweet, tangy, a veritable party in your mouth!Traveling to a different continent, hopefully you saw Debbie’s post about Tea and Dim Sum, A Cup of Tea…Soup for the Soul. We have a lot to learn about other parts of our big world!
Be Gr8 Friends!
